My friend's daughter, Hayley, who is off to Denmark soon for a Study Abroad semester, sent some recommended websites and recipes. Hayley is a vegan, which means she does not eat any animal foods, including cheese! I am not there yet, but my plan is to gradually add more vegan recipes to my repertoire for healthy and compassionate cooking.

"1. you can do ANYTHING with tofu.
2. fake meats taste just as good as real meats, sometimes better.
(personally i generally avoid them because they're heavily processed,

going vegetarian opened up a world of other food to me, and pushed me
to try things that have become favorites. people learn more about
nutrition, health, plants, and taste by going vegetarian than they
could possibly imagine!"
