My favorite "fast" veggie foods

When I come home from work and need to cook something fast that will make me feel good, but I am too darn tired to fuss, I like to work with the following ingredients:

Whole grain flatbreads, pitas or tortillas make great pizza crust: I just add cheese, tomato sauce, and veggies I have on hand. I also love goat cheese on pizza.

Canned chickpeas or canned black beans. The chickpeas can be mashed and mixed with lemon juice, olive oil, a little tahini (comes in a can: it 's made from sesame), garlic, salt and cumin for a wonderful hummus dish. I serve this with pita wedges or carrot sticks and other uncooked crunch vegetables. Black beans make wonderful veg chile.

Vegetable bouillon or broth, preferably low or no salt. Great for making veggie stews and soups in a flash.

Quinoa: cooks fast and it is similar to rice. It has a lot of nutrients including a high level of protein. This is delicious with stewed vegetables on top.

Trader Joe's Simmer Sauces: these jarred sauces can be really tasty mixed with steamed vegetables like cauliflour, broccoli, cut up sweet potato or squash, frozen peas, whatever you like. To enhance the protein content, add cubed plain or flavored tofu.
